On Tuesday, November 17th 2015 and 2016, Chef Francois Payard and Chef Julian Medina, two dear friends of mine,  came together for a magical evening at Delicatessen. Together we prepared an intimate, 5 course dinner benefiting Pancan, an organization that is very special to my family & I. Each chef prepared refined dishes based on the flavors of their favorite family recipes:

  • Chef Julian Medina, Tuna Tostada, sea urchin aioli, peanut salsa macha
  • Chef Michael Ferraro, Beef Tortellini, parma prosciutto, parmesan broth
  • Chef Julian Medina, Halibut Tikin, kabocha purée, lobster mushrooms, pickled habanero-red onion
  • Chef Michael Ferraro, Braised Veal Cheeks, mascarpone polenta, marjoram infused carrots, crispy squash & gremolata
  • Chef Francois Payard, Chocolate Dome Cake, brazilian illanka dark chocolate, chocolate & hazelnut mousse, rice crispy, crunchy hazelnuts & chocolate truffles
